In the Kitchen: Fresh Strawberries


Strawberry Galette: 


1 1/2 cups four

1/4 cup almond flour

2 tbsp powdered sugar

pinch of salt

1 tbsp lemon zest

1 1/2 stick cold butter (grated)

1 tsp white vinegar 

2 tbsp ice water

Combine flour, sugar, salt and lemon zest. Add grated cold butter and using a fork mix and cut the butter until the mixture forms chickpea-size pieces. Drizzle the vinegar and cold water over the flour/butter mixture. Using a wooden spoon or your hands mix the dough just until combined. Transfer the dough onto plastic wrap and knead the dough for 1 minute so that everything comes together. Wrap dough in plastic wrap and chill in the fridge for at least 30 minutes. 

Cream cheese filling:
2 oz cream cheese

2 oz mascarpone (use more cream cheese if you can’t find this)

1/4 cup sugar

1 small egg

1/2 tsp lemon zest

1/2 tsp vanilla (optional) 

Combine all ingredients in a bowl and mix until the mixture is smooth and creamy. Set aside.

Strawberry Filling:
4 cups strawberries (quartered) 

1/4 cup sugar

1 1/2 tbsp cornstarch 

fresh mint (optional) 

Combine all ingredients and set it aside 

Egg wash:
1 small egg

1 tsp oil 

Preheat the oven to 380 degrees. On a lightly floured surface, roll the dough into a circle about 1/4 inch thick. Transfer dough onto a piece of parchment paper. 

Spread the cream cheese mixture on the bottom of the dough. Leave a 2 inch border around the edge. Add the strawberry filling on top. Fold the edges of the dough over the strawberries. Brush edges with the egg wash and sprinkle with sugar if desired. Bake the galette until golden brown (around 40-50 minutes)  

Strawberry Basil Pizza:

Pizza crust, here’s the recipe we used:

1 cup ricotta cheese

1/2 cup mozzarella cheese, shredded

1/2-1 cup fresh strawberries, sliced

1/4 cup fresh basil leaves, chopped

2 tbsp olive oil

1 tbsp honey

balsamic glaze for drizzling

Preheat the oven to 475 degrees. Drizzle olive oil onto the crust. Top pizza crust with shredded cheese, basil leaves, & strawberries. Add small dollops of ricotta cheese on top of pizza. Drizzle with honey. Bake until the crust is golden brown. Top with a drizzle of balsamic glaze and enjoy!
